Healthy Recipes Jerk Chicken

Have you read the story on Huffington Post: Steve Carr, Brain Surgeon, Loses Engagement Ring In Sand Before Beach Proposal In Florida. The story is so geeky!!! Don't you think? Also very romantic!! I am sure the story will go as long as they live! It would be so much fun to talk about it 50 years later, and pass it to their grandchildren! Here's how other people react to the story:

 I was watching Rachael Ray's cooking show the other day (by the way, I think Rachael gained quite a bit of weight even though she said she lost 40 lbs!!! Is that only me to feel that way?), while she was preparing Grilled Jerk chicken. Ohhhhh...it looks soo goodie!! But I wanted a simplified version. In addition, I do not have a grill stove. I decided to just use my oven to make it. 

Benefits:definitely spicy!! If you are lack of appetite, like I do, this is a good way to cook. Red pepper is also rich in Vitamin A.

Warning-if you have a weak stomach or have ulcer, avoid any spicy foods!!

Tea Pairing: Black or Pu-Erh tea
Ingredients:
12 chicken wings

1/2 tbsp dried thyme
2 tsp molasses
1/2 grape fruits
2 oz Gold Rum
4 moderately hot peppers (I used Mexican red peppers)
2 tsp salt
2 tbsp olive oil
1/2 red onion
2 tsp ground all spices
1 tsp ground nutmeg
1 tsp ground cinnamon
1 tsp ground ginger
1 tsp ground pepper

Instructions:


Satefy note: Peppers used in this recipes are hot and can cause extreme pain if they come in contact with your eyes. Strongly recommend you wearing gloves while preparing the Jerk chicken!!
1. Clean the peppers and remove the skin of grape fruit. I keep all the pepper seeds cause they do add a lot of flavors and spiciness to the dish. Put rum, fresh red peppers, thyme, molasses, onion, all spices, nutmeg, cinnamon, ginger, olive oil, salt into a blender. puree until smooth. This is the jerk paste.

2.  Place all chicken wings in a plastic freezer bag. Pour the jerk paste over the chicken wings and coat well. Seal the bag and put it in refrige for overnight. If you do not have time, like I do most of times, you can use a folk to poke on the chicken wings few times then coat with the jerk paste. This will help all the flavors get into the chicken. I let the chicken wings marinated for about 2 hours.

3. Preheat the oven to 425F. Transfer the marinated chicken wings to a baking pan lined with parchment paper or foil. Bake for about 40 minutes or until fully cooked.

If too light, you can add extra salt and ground pepper. 

Serve it with salads such as green leaves!!
