Healthy Recipe Frittata (Spinach, green salad)

Spinach Frittata with Green Salad
Titanic celebrates 100th anniversary!! Did you see this video-Titanic Memorial Travelers dress up in period costume for cruise. That's soo cool!!



Last weekend was soo beautiful that I took a long walk, 10 miles!! I mean 10 miles!!! And I felt I could do few miles after!!

Where I got the energy? Eat well, drink well, and think positively!



I made this Frittata last weekend. It was de-li-cious!! precisely de-li-cious!! The recipe originally is from Martha Steward's cooking book.

Tea pairing-Green tea, black tea

Ingredients A
1 large egg plus 2 egg whites
1 tbsp Parmesan cheese, grated
2 tsp soy milk (or whole milk)
pepper to taste

Topping-1 tbsp Parmesan cheese

Ingredients B
1 tbsp minced red onion
1 tsp olive oil
1 1/2 cup baby spinach

Ingredients C
2 cups salad greens
1/4 tsp vinegar
Salt and pepper to taste

Instructions:

1. Preheat the oven to 450 F degrees. Place two cups of oven proof baking dishes in a baking sheet.
2. Mix the ingredients A in a medium bowl.
3. As for Ingredients B-Heat a small skillet, add 1 tbsp oil, stir fry onion for 2 minutes, or until softened. Then add the baby spinach. stir fry for another 2 minutes or until wilted.

4. Mix the ingredient B with ingredient A, evenly.
5. Remove the heated dishes from oven and coat with oil. Immediately pour in egg mixture and top with the rest of Parmesan cheese.Bake for about 12 minutes or until puffed up and golden brown.

6. Toss the greens with vinegar. If you feel too light, add some salt and pepper. I did not add any salt because the cheese has enough salt.
